
AVOCADO, CELERY,
WATERCRESS, BROWN RICE
SALAD
A healthy yet delicious lunch time fix, which can be made at home and is easily transportable to the office.
If you prefer a sandwich, the rice may be omitted, with the remaining ingredients being made into a whole grain sandwich (gluten-free if prefered).
Serves 1
- ¼ – ½
avocado - 1 celery
stick, finely chopped - 2 -3 tbsp
cooked short grain brown rice - A handful
of watercress leaves - 4
walnuts, chopped
For the dressing or
spread
- 1 tsp
tahini - 1 tsp
pumpkin seed butter - 1 tsp
lemon juice

Mix
tahini, pumpkin seed butter and lemon juice together and combine with rice.

Assemble
remaining ingredients to make salad.
If sandwich is
preferred to salad, spread bread with tahini mixture and fill sandwich with
avocado, celery, watercress and walnuts.
